These mouthwatering fall off the bone BBQ ribs are so juicy and tender. They are perfect for summer entertaining.

Ingredients:
  • 2 lb. Baby Back Ribs (Optional St. Louis Cut Ribs or Spare Ribs)
  • 1 can Beer, 360 ml
  • 1 cup Barbecue Sauce (Optional)
  • Marinade for Ribs
  • 3 tbsp. Apple Cider Vinegar
  • 3 tbsp. Red Wine
  • Dry Rub for Ribs
  • 2 tbsp. Dry Chili Pepper
  • 2 tbsp. Black Peppercorn
  • 1 tsp. Italian Herb
  • 2 tsp. Salt
  • 1 tbsp. Garlic Powder
  • 1 tbsp. Smoked Paprika
  • 1 tbsp. Brown Sugar

Marinate the ribs: coat the meat with apple cider vinegar and red wine. The marinate juice helps dissolve the dry spices that’ll be applied in the next step.

Treat the ribs with the dry rub: sprinkle enough dry rub spice blend, to coat all surfaces but not so much that the meat doesn't show through.

Heat the grill to 350-375°F degrees. When the grill has reached a steady temperature and is no warmer than 375°F, oil the grill and place the ribs right on the grill, using tongs to maneuver them into place. Grill for 5 minutes on each side.

Transfer the ribs onto the indirect baking rack with a baking pan on top of the grill. Add the beer in the baking pan and grill, uncovered, for at least 90 minutes. Ribs should be cooked low and slow. For most of the cooking, the ribs stay over indirect heat. If you’re cooking over a too-hot grill, the meat will dry out.

Brush the BBQ sauce on the ribs for both sides.

Grill for additional 15 minutes.

To serve the ribs, you’ll want to split them up into manageable portions. Using a sharp knife, carefully cut them into one or two-bone sections.
