Beautiful and delicious one-dish meal, this Golden Egg Fried Rice with Shrimp is so easy to make and ready in 20 minutes or less. Chef John shares tips on how you can make egg yolks coated evenly and absorb into each grain of rice.

Ingredients:
  • 2 cup Cooked Rice
  • 6 large Egg Yolks, divided
  • 1 tbsp. Cooking Oil
  • 1 cup Peeled Shrimps
  • 1 tbsp. White Wine
  • 1/3 cup Celery
  • 1/3 cup Onion
  • 1/3 cup Carrot
  • 1/4 tsp. Ground White Pepper, to taste
  • 1 tsp. Salt, To Taste
  • 1 tsp. Lemon Juice, to taste
  • 1 tbsp. Green Onion, chopped

Preparation: Begin by mincing the celery, onion, and carrots. Set aside.

In a separate bowl, combine the cooked rice with 3 egg yolks. Mix thoroughly by hand until the rice is well-coated with the egg yolks.

Cooking the Shrimp: Heat a wok or large frying pan over medium- high heat and spray with cooking oil. Add the peeled shrimp to the wok and stir-fry briefly. Pour in the white wine to eliminate any odor, continuing to stir-fry until the shrimp turn pinkish in color.

Stir-frying the Rice: Add the rice and egg yolk mixture to the wok with the shrimp. Stir-fry the mixture, breaking up any clumps of rice with the back of your spatula. Flatten the rice to ensure it’s in contact with the base of the cooking pan for even cooking. Now, add the minced celery, onion, and carrots to the wok, followed by the white pepper, salt, and a squeeze of lemon juice. Stir well to combine all the ingredients.

Final Touches: Create a well in the center of the rice mixture and pour in the remaining 3 egg yolks. Stir quickly to distribute the egg yolks throughout the rice, cooking until they are just set.

Toss in the chopped green onions and give the mixture a few more stirs to combine.
