  • Spice Blend
  • 1 tbsp. Cajun Seasoning or Old Bay
  • 1/2 tsp. Black Pepper
  • 1/2 tsp. Salt

In a large mixing bowl, combine the buttermilk, hot sauce, and salt.

Add the chicken to the plastic bag and add marinade, seal shut, and let marinate for 1-2 hours.

Incorporate the cajun spice blend with the flour set aside.

Drain the chicken pieces from the marinade and shake off excess liquid.

Immerse each piece of chicken into the flour blend and thoroughly coat all over.

Lay the chicken pieces apart on a resting rack and refrigerate for at least 1 hour.

You should start to see a change from a dry coating to a tacky coating that will feel sticky to touch so its best not to cover your chicken with plastic at this stage. after 1 hour or even overnight if you have time the chicken coating will have firmed up, ready for frying.

Grate butter on the largest shredding hole of your cheese grater.

Finish with the buttermilk and cold butter combining with your hands until you reach a soft dough.

Place the dough onto a lightly floured surface.

Gently knead the dough by folding it over 1/4 into itself 3-4 times, be careful not to overwork the dough.

Shape out out the dough with your hands you get approx 1.5 inch thickness. mold into rounds.

Make sure the biscuits are touching each other slightly, this will help them to rise in the oven.

Return to the fridge for 20 minutes to let the butter firm up again.

Take the biscuits out of the fridge and bake for 8 minutes.

Pull the biscuits out of the oven brush evenly with the honey butter.

Return the biscuits to the oven for a further 4 minutes or until they reach a lovely golden color.

Allow the chicken to come to room temperature before frying. Heat the oil to 350°F/180°C. When the internal temperature registers 165°F/70°C, or about 10-15 minutes for bone-in thighs, breasts, and drumsticks.

Fry in batches of 2-3 pieces to make sure the oil temperature does not drop too much; you want the oil to stay around 325°F/160°C while the chicken fries.

Remove from the oil and place it on a resting rack. Lightly dust with salt while still hot, or additional cajun seasoning.
