Cooked snails are a beloved French delicacy that is usually served as an appetizer. Before preparation, the snails must be purged, removed from their shells, and cooked, usually with butter, chicken stock, or wine.

Ingredients:
  • 0.5 cup Snails
  • 1 stick Salsify
  • 4 tbsp. Butter
  • 0.25 tsp. Salt
  • 0.25 tsp. Pepper
  • 1 tsp. Olive oil
  • 0.25 cup Chicken broth
  • 0.25 cup Parsley
  • 1 tbsp. Oregano

Preheat the oven at 300°F/150°C.

Peel the salsify using a vegetable peeler. Wrap with foil and add olive oil, salt and rosemary.

Bake salsify for 1 hour.

Heat the 2 tbsp butter in skillet over medium-high heat.

Heat the 2 tbsp butter in saucepan over medium-high heat.

Add snails to skillet and stir well.

Cut the baked salsify.

Add salsify to saucepan and stir well.

Add salt and pepper to snails. and keep rolling the snails.

Transfer snails to platter.
