For Chinese, 8 is a lucky number as it sounds like the word “Fa”, which means “to become wealthy.” This Eight Treasures Stir Fry is easy to make and goes well with either rice or noodle.

Ingredients:
  • 1 cup Chicken Leg, Deboned And Diced Into ½-inch Cubes
  • 1 cup Pork Tenderloin, Diced Into ½-inch Cubes
  • 1 cup Dried Bean Curd, Cut In ½-inch Cubes
  • 1 cup Peas
  • 0.5 cup Mushroom, Cut In ½-inch Cubes
  • 0.5 cup Small Shrimp, Rinsed And Drained
  • 1 cup Roasted Peanuts
  • 1 cup Bamboo Shoot, Diced Into ½-inch Cubes
  • 2 count Cloves Garlic, Minced
  • 2 count Green Onion, Chopped
  • 3 count Dried Chili, Sliced
  • 3 tbsp. Cooking Oil
  • 2 tbsp. Shaoxing Wine
  • 2 tbsp. Chili Garlic Sauce
  • 2 tbsp. Spicy Broad Bean Paste (Doubanjiang)
  • 2 tbsp. Regular Broad Bean Paste
  • 2 tbsp. Sweet Flour Paste
  • 1 tbsp. Sugar
  • 1 tsp. Soy Sauce
  • 1 tbsp. Sesame Oil
  • Marinade
  • 0.5 tsp. Salt
  • 1 tsp. Cornstarch And 1 Tsp Water Mixture

Stir fry the shrimp with a teaspoon of oil over medium heat for 2 minutes. Take it out of wok and set aside.

Add the water in the wok, bring to boil. Add peas, shrimps, and cook for 1 minute. Drain and set aside. In the same wok with 3 tbsp water, add salt, shrimp and peas. Stir fry for 15 seconds. Transfer to a small bowl, and set aside.

Marinate the chicken and pork with salt and cornstarch water mixture for 5 minutes.

Heat 4 cups of oil in the wok, slowly stir in the meat and cook for 15 seconds.

Add the water in the wok, bring to boil. Add dried bean curd, mushrooms, bamboo shoots, and cook for 1 minute. Drain and set aside.

Add a tablespoon of oil to the pan, and stir-fry the garlic, green onion, dried chili over medium heat for about a minute. Add the rest of sauce ingredients and stir for another 3-5 minutes, until they start to smell fragrant.

Now add all the pre-cooked ingredients: chicken, pork, dried bean curd, bamboo shoots, and mushrooms. Continue to stir and cook for another few minutes so that everything comes together.

Stir everything together and keep stirring until most of the liquid has evaporated and all the ingredients are well-coated in sauce. Add toasted peanuts, plate and serve!
