It is a popular dish of Northeastern cuisine in China. It was created by a chef named Xingwen Zheng who worked at an officer Xueying Du’s house in the reign of Emperor Guangxu in the Qing Dynasty at Ha Er Bin city. It looks in shining golden color and tastes sweet and sour.

Ingredients:
  • 1 lb. Pork Tenderloin
  • Marinade
  • 0.25 tsp. Salt
  • 0.25 cup Yellow Rice Wine
  • 1 tbsp. Soy Sauce
  • 1 tsp. White Pepper
  • Sauce
  • 0.25 cup Water
  • 1 tbsp. Soy Sauce
  • 0.5 cup Sugar
  • 1 tsp. Salt
  • 1 tsp. Apple Vinegar
  • 1 tbsp. Sweet Black Rice Vinegar
  • 1 tbsp. Honey
  • Fry Coating
  • 2 cup Potato Starch
  • 0.75 cup Corn Starch
  • 1.5 cup Water
  • 1 small Julienned Ginger
  • 1 tbsp. Julienned Red Pepper+Green Onion
  • Seasoning
  • 1 tbsp. Shaoxing Wine
  • 1 tsp. Sesame Oil

Cut ginger into thin strips, and soak in water.

Cut the pork tenderloin into large 2-3 millimeter thick slices. (Note: it is better not to cut the slice too thin. If the slice is too thin, it will be too dry when frying.)

In a mixing bowl, combine the sliced pork tenderloin, salt, rice wine, soy sauce, and white pepper powder together, mix evenly.  Marinate for 1 hour.

Mix water, soy sauce, crystal sugar, salt, cider vinegar, vinegar, and honey together to make the cooking sauce for later use.

Mix well potato starch, corn starch, and water together in a mixing bowl.

Put in marinated pork tenderloin slices, toss to coat evenly.

In a wok/cooking pan, bring enough cooking oil to 300-350°F/150-180°C, deep-fry pork tenderloin slices until golden. Remove from oil and drain.

Return the wok/cooking pan to the stove, add oil, saute sliced ginger until fragrant, then add some Shaoxing wine, pour the pre-prepared cooking sauce, stir and cook until bubbling.

then add the fried sliced pork tenderloin.

Add julienned green onion, julienned red pepper, and some sesame oil. Quickly stir-fry several times.
