  • Marinade
  • 1.5 tsp. Salt [Marinade]
  • 1 tsp. Five-Spice Powder [Marinade]
  • 1 tbsp. Maltose [Marinade]
  • 3 tbsp. White Wine [Marinade]
  • 10 oz. Potato
  • 1 tbsp. Sliced Garlic
  • 1 tbsp. Chef Made Peppercorn Oil (See ''Chef John Signature Oil'' Video)
  • 2 stalks Large Green Onion
  • 5 oz. Green and Red Bell Pepper
  • 5 oz. Cabbage
  • 2 tbsp. Shaoxing Wine
  • Seasoning
  • 1 tsp. Chili Powder [Seasoning]
  • 1 tsp. Ground Cumin [Seasoning]
  • 2 tsp. Pepper Salt Powder [Seasoning]
  • 1 tsp. Dried Cumin [Seasoning]

Prick the pork belly with a steel needle. Apply on a little salt and Chinese five-spice powder.

In a small bowl, combine white wine, malt sugar, a pinch salt, and mix well. Then brush it on the pork belly. Marinate for 6 hours.

Bake at 350℉ / 180℃ for one and a half hours in the oven.

Slice pork into thin slices.

Cut potato into chips.

Chop cabbage and green onion.

Deep-fry potato chips at 300°F / 150℃ until golden.

In a heated wok, stir fry a few garlic slices until fragrant, add chef made pepper oil, chopped green onion, green and red peppers, chopped cabbage, fried potato chips, chili powder, cumin powder, pepper salt, cumin, and pork belly slices.
