Slice the pork belly into ¼ inch thick 1x2 inch slices.

In a mixing bowl, combine sliced pork, 1oz/30g sliced ginger, 1oz/30g chopped green onion, 1tbsp/15ml cooking wine, a pinch of salt, 1tsp/5g sugar, 1tsp/5ml soy sauce, and 1tsp/3g five-spice powder. Mix thoroughly, and marinate for 15 minutes.

In another mixing bowl, combine 1lb/450g sweet potato flour, 1tsp/5g salt, 1tsp/3g five-spice powder, 2tsp/6g white sesame, 1tsp/5ml cooking oil, and 7 eggs, using an egg beater mixing for 5-10 minutes until the batter is smooth.

Put the marinated pork slices in the batter.

In a cooking pan over high heat, bring enough oil to 120°C-150°C/250 ~ 300°F, add well-coated pork slices one by one, fry for 2-3 minutes until golden, then remove from oil and drain.

Bring the oil temperature to 150°C-180°C/300 ~ 350°F, quickly re-fry pork slices, remove from oil.
