This crab meat recipe is a very famous and satisfying Shanghainese dish, full of crab umami flavors and brings a sense of comfort. Although this dish is year around, it tastes best when hairy crab is in season.

Ingredients:
  • 2 counts Cooked Dungeness Crab
  • 1 pack Multi-Use Tofu
  • 0.5 tsp. Salt
  • 1.5 tbsp. Chef Made Assorted Aroma Oil (See "Chef John's Signature Oils" Video)
  • 1 tbsp. Ginger, Minced
  • 1 tbsp. Green Onion, Minced
  • 1 tbsp. Shaoxing wine
  • 1.5 cup Water
  • 1 tsp. Salt
  • 0.5 tsp. Sugar
  • 1 tsp. Sweet Black Rice Vinegar
  • 0.25 tsp. White pepper
  • 1 tbsp. Water + Corn Starch Slurry

remove meat from the crab. set aside.

Cut the tofu into ½ inch cubes.

In a cooking pot, add enough water, Shaoxing wine, and a pinch of salt. Bring to a boil, add tofu cubes, and cook a few minutes. Drain. (Tip: this step is to make the tofu stronger and more delicious.)

In a cooking pan over high heat, add Chef Made Assorted Aroma Oil (See "Chef John's Signature Oils" Video), minced green onion and minced ginger. Saute until fragrant. Then add crab meat, water, salt, sugar, and sweet black rice vinegar. Stir to mix well.

Add tofu, white pepper, water and corn starch slurry to thicken, and Chef Made Assorted Aroma Oil. Push back and forth several times to mix all the ingredient carefully without breaking the tofu.
