Have you ever cooked fish in a clay pot? If not, now is the opportunity to give it a try. This easy-to-prepare recipe with a few ingredients is amazing. The black carp as the basis, all together with the vegetables and Cornelian cherry and the spices as saffron supply this dish a delicious flavor. Enjoy this tasty soup/stew that is worth trying.

Ingredients:
  • 4.4 lb. Black carp
  • 5 Large Shallots
  • 15 Large Potatoes
  • 5 Cherry tomatoes
  • Water, for each clay pot to be filled
  • Salt to taste
  • 1 Bunch of Parsley, chopped
  • 10 Large Bay leaves
  • Saffron to taste
  • 5 tbsp. Tomato paste
  • Black pepper to taste
  • 20 Large Cornelian cherry

Clean the carp and cut the head. Cut in the middle and take out the intestines. Cut into 1.2 inches wide pieces.

Clean the shallots and the potatoes. Cut the shallot into slices and the bigger potatoes in half.

Prepare 5 clay pots of equal size.

Start to add an equal amount of shallot, 3 potatoes, 1 smaller tomato, a piece of black carp to each pot. Add also 2 bay leaves, a pinch of black pepper, a pinch of saffron, 1 tablespoon of tomato paste, a pinch of salt, and 4 pieces of Cornelian cherry to each clay pot.

Pour water into the pots until the top so, that everything in the pot is covered. Put a cover on each pot and take them to the oven or fireplace.

Cook them for 35 minutes. All the ingredients should be well cooked. Serve with chopped fresh parsley. Enjoy!
