Ingredients:
  • 200 g Sliced squid ⅛
  • 4 cup Coconut milk
  • 0.25 cup Sliced lemongrass
  • 6 thick slices Galangal (5 g each)
  • 5 pcs Shallots
  • 2 slices Chilies
  • 0.25 cup Cilantro root
  • 0.25 cup Fish sauce
  • 10 pcs Kaffir leaves
  • 3 pcs Dried red chili
  • 1 bunch Cilantro (for garnish)
  • 0.5 pc Lime juice

Score shallow diagonal cuts in a crisscross pattern on the inside surface of the squid, taking care not to cut through. Then divide into two or four pieces.

Add coconut milk into a cooking pot over medium heat.

In the same pot, add the lemongrass, galangal, shallots, cilantro root, and red chili into coconut milk. Bring it to a boil.

Then add the sliced squid, fish sauce, lime juice, kaffir leaves, and dried red chili. Cook for about 1 minute.

Turn off the heat and transfer to a soup bowl. Garnish with cilantro.

Highly recommend toppings for this coconut soup. At the very least, fresh coriander/cilantro and lime juice is a must. It just adds that little hit of freshness that makes all the difference.
