  • 0.25 cup Cold Water
  • 0.5 cup Glucose Syrup Or Corn Syrup
  • 1 tbsp. Glycerin
  • 2 tbsp. Shortening Or Butter
  • 1 tsp. Vanilla Extract
  • 8 cup Sifted Confectioners' Sugar

  • 1 cup Milk
  • 1.3 cup Whipping Cream
  • 1 cup Dark Chocolate, Melted
  • 2 cup Whipped Cream
  • Cake
  • 6 count Eggs
  • 0.3 cup Sugar
  • 1 cup Flour
  • 0.25 cup Cocoa Powder
  • 0.5 tsp. Baking Soda
  • 0.5 tsp. Salt
  • 0.25 cup Whipping Cream
  • 0.25 cup Butter, Melted

Over a double boiler (placing the bowl over a pot with simmering water on low heat), add milk, shipping cream, and melted dark chocolate. Whisk the milk mixture until it becomes smooth. Let it cool.

Add whipped cream to the chocolate mixture and mix well. Set aside.

Preheat oven to 350°F (180°C).

In a mixing bowl, add the eggs, sugar, and mix for 1 minutes.

Add flour, cocoa powder, baking soda, salt, and turn on the mixer. Add whipping cream, butter, the beat until evenly combined. Make sure there are no lumps.

Transfer batter to prepared 14 x 10 inches baking sheet pan and smooth the top with an offset spatula.

Bake 350°F(175°C) for 10 mins until light golden brown. Let cool completely.

Cut the cake into 10 x 10 size. Place into a 10x10 Cake mold.

Pour the chocolate mousse on top of the cake. Freeze for 2 hour

Remove the chocolate mouse cake from the mold. Cut into 1 ½ inch strip vertically.

Transfer the cake onto a serving plate. Decorate with whipped cream in wave form on the top. Garnish with raspberry and coin shape fondant on top.
