Crispy hash browns can be more than a breakfast thing! Perhaps you have made hash browns before but have had a hard time getting them crispy. Chef John’s tutorial on how to make crispy hash browns is perfect for you. The secret is that you need to rinse the starch out of the potatoes and squeeze the moisture out. The oil also needs to be nice and hot to get them browned and crispy.

Ingredients:
  • 09 oz. Potato (about a large potato)
  • 0.5 oz. Carrot, shredded
  • 3 tbsp. Cooking oil
  • 0.5 oz. Green onion, minced
  • 0.25 cup Custard powder
  • 1 cup Potato starch
  • 1 large Egg
  • 1 tsp. Salt
  • 1 tsp. Five-spice powder
  • 0.25 tsp. Ground black pepper, a pinch
  • 1 tsp. White sesame seed

Shred 9oz/250g potato you can use a knife, cut potato into thin slices first, then cut into thin strips as shown on the video. ( Tip: prepare a cup of cold water on the side, drop a few drops of water on the knife to avoid the potato pieces stick on the knife. ) You may use a shredder for easy cutting at home.

Wash the shredded potatoes in cold water until the water is clear.

Squeeze out excess water.

Put the shredded potato in a mixing bowl, add ½ oz/15g julienned carrots, ½ oz/15g minced green onion, ¼ cup /35g custard powder, 1cup/140g potato starch,1egg, 1tsp/5g salt 1tsp/3g five-spice powder, a pinch of ground black pepper, then blend thoroughly.(Note:if the mixture is too dry you can add a couple of teaspoons of water)

In a skillet over low heat, add the oil to grease the bottom. Add the mixture and make a pancake-like flat circle, sprinkle while sesame on top, and pan-fry patiently over low heat until golden on both sides.

Cut the round hash brown into pie wedges and serve.
