Deliciously chewy and springy, these Chinese Handmade Noodle with Tomato Sauce are easier to make than you think, and they taste 10x better than the store-bought ones!

Ingredients:
  • Handmade noodle
  • 2 cup All-purpose Flour
  • 1 tsp. Salt
  • 1 tsp. Baking Soda
  • 0.5 cup Water
  • 1 tbsp. Cucumber, Shredded
  • Tomato Sauce
  • 2 tbsp. Cooking oil
  • 3.5 oz. Pork, Diced
  • 2 tbsp. Cooking wine
  • 3 oz. Tomato, Diced
  • 0.25 cup Ketchup
  • 1 oz. Mushroom, Sliced
  • 1 oz. Dried LilyFlowers, Soak In Water, Cut In The Middle
  • 1 tbsp. Green Onion, Minced
  • 2 cup Chicken Broth
  • 0.5 tbsp. Oyster sauce
  • 1 tbsp. Soy Sauce
  • 0.25 tbsp. Cornstarch Water (2 Tbsp Cornstarch Mixed With 1 Tbsp Water)
  • 1 tbsp. Sichuan Peppercorn Oil
  • 1 tbsp. Garlic, Minced

Combine flour, salt, baking soda, slowly add water and mix with a spatula until water is fully absorbed.

Knead by hand, until dough forms and the bowl is clean of flour.cover and let it rest for 2 hours. Dust a working surface (or large cutting board) with flour and transfer the dough onto it.

Knead until the surface of the dough becomes smooth, about a few minutes. Dust the working surface again. Press the dough into a flat disc. Roll with a rolling pin into a large thin rectangle.

Dust the dough sheet with plenty of flour. Fold the long side till it shapes a multi-layered long sheet.

Slice along the short side with a sharp knife to make noodles. Unfold the noodles and shake off extra flour.

In a skillet at high heat, add a tbsp cooking oil, stir fry meat until meat pieces are cooked.

Add tomato, ketchup, saute till fresh tomato pieces are soft. Add mushroom, soaked lily flower, garlic, green onion, stir and cook for a little.

Add chicken broth and soy sauce, stir and cook for about 1 minute, add starch and water mixture for thickening.

Finally, add Chef John Signature Sichuan Peppercorn Oil. set aside.

Bring a large pot of water to boil, drop in noodles, and stir gently. Boil till noodles are cooked through.

Drain the water, put noodle in a serving dish, and top with sauce.
