  • 0.5 tsp. Salt
  • 1 tsp. Baking Powder
  • 0.5 tsp. Baking Soda
  • 5 oz. Water
  • 1 tsp. Cooking Oil

On a working surface, combine flour, salt, baking powder, and baking soda. Mix well and add water to form a dough. Knead the dough until smooth.

Cover with plastic wrap and rest for 15 minutes.

Turn the rested dough onto a floured surface, knead for a few minutes. Put some oil on your palm to prevent dough stick to your hands or kneading surface. Cover with plastic wrap and let it rest and rise for 2 hours.

At this time, the dough becomes soft and elastic. Flour the working surface, roll and press the dough into about 1-inch thick rectangular sheet. Cut the sheet crosswise 2 inches apart.

Stack two strips together, and press a chopstick in the middle lengthwise.

In a cooking pan, bring enough oil to 350℉-430℉/ 180°C-220°C, hold both ends and stretch the stack strips, then carefully lower it into the oil (be careful not to splash). When it comes up to the surface, roll it around continuously with a pair of chopsticks. Fry the dough stops expanding and is evenly golden. Repeat the procedure to cook the rest of the dough.
