This special technique keeps the chicken wing joint attached to the breast, this allows more tenderness and better flavor for your chicken and presents well on the plate.

Ingredients:
  • 5 Baby Potatoes
  • Cooking Oil Spray
  • Fresh chicken breasts with the wings joint left attached.
  • 1 tbsp. Olive oil
  • Half Chorizo Sausage
  • 1 tbsp. Butter
  • 0.5 tsp. Salt
  • 0.25 tsp. Black Pepper
  • 1 sprig Parsley, minced
  • Fresh Baby Spinach
  • 0.5 small Lemon

Insert the breast with the tip of your knife to the bone, use short shallow strokes to separate the bone from the breast, pull back the breast cut, and trim around the wing bone.

Boil the potatoes in whole for approx 10mins.

Slice the Chorizo in roughly 0.5cm thick and set aside.

Sear the chicken pieces on both sides in a griddle pan turning the breast around to make a nice criss cross effect on the skin then place chicken in the oven for approx 10 mins.

Cut the potatoes in half and shallow fry the cut side with a little bit of oil, until it turn golden brown. Turn the potatoes over and add the sliced chorizo, and salt and pepper, toss in a knob of butter and lastly add the spinach, cook until wilted.

Place the Chicken Supreme on top of the sauteed vegetables .
