This one-pot recipe is super easy to make and a delicious midweek dish. A go-to recipe. you probably already have all the ingredients in your fridge. With three of the main food staples all in one pot. A whole dinner! Whose turn is it for the dishes? It’s Mine!

Ingredients:
  • 1 medium Red onion
  • 2 medium Carrot
  • 1 slice Chicken breast
  • 1 tbsp. Olive oil
  • 1/2 tsp. Sea salt
  • 1/4 tsp. Ground black pepper
  • tbsp. Butter
  • 1 cup Brown long grain rice
  • 1 cup dry orzo pasta
  • 7 sprigs Fresh thyme
  • 3 pieces Bay leaf
  • 1/2 tsp. Garlic powder
  • 1/2 tsp. Garlic powder
  • 1/2 tsp. Cayenne pepper powder
  • 3 cup Chicken broth
  • 1 medium Cauliflower
  • 1/4 cup Milk
  • 1/2 tsp. Lemon zest
  • 4.8 oz. Cheese
  • 1 tsp. Parsley

Remove the cauliflower core and cut it up into smaller pieces, set aside.

Dice red onion and carrots.

Heat olive oil in a large pot and lightly cook the onion and carrots for 5 minutes.

Dice chicken breasts, add them into the pot, and season with salt and pepper.

Cook until the chicken is seared, then add butter, rice, and orzo pasta.

Add thyme, bay leaf, garlic powder, cayenne pepper powder and chicken broth.

Season once again with salt and pepper and bring it to a simmer for approx 5 minutes.

Add the cauliflower into the pot. Cover and cook on low for 20-25 minutes.

Add milk, lemon zest, and cheese, then

Transfer to the oven and bake in 425°F/220°C for 15 - 20 minutes or until the top is lightly golden.

Garnish with parsley then serve. Enjoy!
