Here’s a warming dish to try cooking for your next meal: chicken and lima bean stew. Juicy chunks of chicken thighs are simmered in a piquant sauce of roasted grape tomatoes and red pepper flakes; to round up the flavors, stir in some heavy cream for a velvety smooth finish.

  • 1 cup Grape Tomatoes
  • 1 tbsp. Olive Oil
  • 1 tsp. Thyme
  • 1.3 lb. Chicken Thighs
  • 0.7 cup Red Onion
  • 3 clove Garlic
  • 1 tsp. Red Pepper Flakes
  • 1.5 cup Cooked Large Lima Beans
  • 1.5 cup Chicken Broth
  • 0.5 cup Heavy Cream
  • 2 tbsp. Parsley
  • 1 tsp. Lemon Zest
  • 1 pinch Salt to Taste
  • 1 pinch Black Pepper to Taste

Place fresh grape tomatoes in a bowl, add olive oil, a little salt, black pepper, thyme and toss to coat. Spread the prepared grape tomatoes evenly on a baking sheet. Roast tomatoes at 425 °F / 220 °C for 25 minutes.

Debone chicken thighs, then cut the meat into medium-size chunks. Season chicken with a bit of salt and black pepper, mix with hands to ensure the meat fully absorbs the seasonings.

Heat olive oil in a pan and cook the chicken over medium heat. Meanwhile, chop red onion and garlic for later use. Remove chicken from pan when both sides of the meat turn a light golden brown.

Add chopped red onion and garlic to the same pan and sauté using the remaining oil. Add red pepper flakes and continue cooking until aromatic.

Return cooked chicken into the pan, then add lima beans and stir to combine. Add chicken broth, season with salt and black pepper to taste, cover the pan with a lid and simmer over medium-low heat for 5 minutes.

Remove roasted tomatoes from the oven and add them into the pan. Stir in heavy cream, put the lid back on the pan and simmer for another 5 minutes.

Roughly chop kale, add it into the pan and cook for 2 minutes until slightly wilted. Spoon the chicken stew into a bowl.

Chop parsley and zest the lemon then mix to combine, top chicken stew with parsley and lemon zest mixture and serve immediately.
