🍜 Slurp! Slurp! Here’s a super-easy noodle recipe for noodle fans. All you need is to stir-fry your favorite ingredients together with the cabbage in your fridge. You’ll be surprised by the crispy, sweet cabbage, and then once again by the texture of the plump udon noodles. If you add some katsuobushi to your liking, its savory smoky flavor will add extra-deep umami to your stir-fried udon.

Ingredients:
  • 2 Servings Udon noodles
  • 2 Leaves Cabbage
  • 1/4 Large Onion
  • 1 Stalk Small green onion
  • 2 Tbsp Cooking oil
  • 1/4 Cup Noodle water
  • Seasoning blend:
  • 2 Tbsp Oyster sauce
  • 1/2 Tbsp Soy sauce
  • 1 Tsp Korean anchovy sauce (replaceable with other kinds of fish sauce)
  • 1 Tbsp Oligo syrup (replaceable with sugar)
  • Pepper to taste
  • 1/2 Tbsp Minced garlic
Directions:

Cut the cabbage into bite-size pieces. Julienne the onion into thick pieces. Chop the small green onion.

Blanch the udon noodles for 10 seconds in boiling water, and take them out. Set the noodle water aside for later.

Mix all the seasoning blend ingredients in a bowl. With a dash of oil in a heated pan, stir-fry the minced garlic and cabbage.

Once the cabbage becomes translucent, add in the onion and stir-fry. Then, add the noodles and seasoning blend and stir-fry. (tip. Adjust the thickness by adding a small amount of the noodle water.)

When it’s ready, sprinkle some small green onion before it’s served. (You can sprinkle some katsuobushi atop to your liking.)
