Cabbage potato pie is an easy oven baked pie that’s great for breakfast, lunch, and dinner! It is packed with flavor, bacon, plenty of vegetables, and cheese!

Ingredients:
- 2 lb. Potatoes
- 1 Large Cabbage
- 1/2 cup Bacon
- 1/2 cup Onion, diced
- 1/2 cup Carrot
- 1 tsp. Fresh Thyme
- 1 tsp. Fresh Oregano
- 1/2 cup Peas
- 4 tbsp. Cheese
- 3 Small Eggs
- 1 tsp. Salt [For Potato Boil]
- 4 tbsp. Butter
- 1½ tsp. Salt [For Mashed Potato]
- 1/2 tsp. Black Pepper [For Mashed Potato]
Directions:

Peel the potatoes, cut into cubes.

Add potatoes into salted water, cook for 20 minutes.

Remove the cabbage core, boil in water for 5 minutes, or until it turns soft.

Slice thin strips of bacon and fry in a pan. Turn off the heat after bacon turns golden brown.

Separate the leaves of cabbage, remove stems if necessary, slice leaves in half, set aside.

Slice onion and carrots.

Add into the bacon and stir fry until onions are soft and translucent.

Add thyme and oregano.

Mash the potatoes.

Mix in peas, grated cheese, eggs, salt and pepper. Add the bacon and vegetables from earlier. Mix well.

Melt butter in a skillet.

Turn off the heat and lay cabbage leaves around on the bottom into a flower-like pattern.

Making sure the tips of the leaves stick out.

Place the potato mixture in the middle.

Cover by folding in the cabbage leaves like wrapping a present. Add sliced butter on top.

Place the skillet into the oven at 400°F / 205°C and bake for 30 minutes until the top turns golden brown.
