Ingredients:
  • 2 lb. pork belly, cut into small pieces
  • 7 oz. shallot, thinly cut crosswise
  • 1 oz. garlic cloves, peeled
  • 1/4 cup Shaoxing wine
  • 1/4 cup rice wine
  • 1 cup soy sauce
  • 1 oz. rock sugar
  • 1/4 cup Shaoxing Huadiao rice wine
  • 3 cup water
  • 3 large eggs, hard boiled and peeled

In a wok, deep-fry shallot and garlic.

From the lowest heat setting, gradually increasing in temperature until contents are golden brown. Drain off oil. Set aside.

Return wok to stove, stir-fry pork until sizzling. Flambé with Shaoxing Huadiao wine. Keep stirring and add rice wine, soy sauce, and rock sugar. Stir-fry until sugar is melted and sauce is bubbling.

Add Shaoxing wine, water, eggs, and deep-fried shallot and garlic. Over low heat, simmer for 45 minutes.
