Ingredients:
  • 1 lb. Golden Pomfret
  • Marinade
  • 0.25 tsp. Salt
  • 0.25 tsp. Five-Spice Powder
  • 1 tsp. White Wine
  • 1 tsp. Cooking Oil
  • 0.5 oz. Fresh Garlic, Sliced
  • 0.5 oz. Fresh Ginger, Sliced
  • 1 tbsp. Green Onion, Finely Chopped, To Taste
  • 0.7 oz. Pickled Chili Pepper
  • 1 tbsp. Peppercorn
  • 1 oz. Tomato, Diced
  • 1 oz. Onion, Diced
  • 1 bottle Beer
  • 1 oz. Potato, Sliced
  • 0.5 oz. Fresh Green and Red Chili Bell, Cut In A Circle Shape
  • 1 cup Bean Sprouts, To Taste
  • 0.5 count Fresh Lemon Juice, To Taste
  • Seasoning
  • 0.5 cup Ketchup
  • 1 tbsp. Oyster Sauce
  • 1 tbsp. Soy Sauce
  • 1 tsp. Brown Sugar, To Taste
  • 0.25 tsp. Cumin Seed, To Taste
  • 0.5 tsp. Ground Cumin, To Taste
  • 0.25 tsp. Black Pepper, To Taste
  • 1 tbsp. Butter

Make a few diamond patterns cuts on both sides of the fish.

Rub salt, Chinese five-spice powder, and white wine on both sides. Then drizzle with cooking oil, and marinate for 1 hour.

Place fish in a grill basket. Grill in with the lid closed for 20 minutes. Flip over one time at about 10 minutes.

Place a cast-iron skillet on the grill rack; add butter, garlic, ginger, and green onion; cook until fragrance. Then add pickled chili peppers, peppercorn, tomato, onion, ketchup, oyster sauce, soy sauce, brown sugar, beer, potato, ground cumin, and cumin seeds. Keep stirring while adding ingredients.

Add in grilled pomfret fish, cover the lid, and cook for 10 minutes.

Open the lid, add green and red chili peppers, bean sprouts, green onion, lemon juice, and black pepper on top. Serve immediately.
