As a classic Shanghainese dish, the wheat gluten is braised with bamboo shoot, mushroom, black fungus, daylily in a sweet and savory sauce and simmered for one hour, so it absorbs all the good flavors.

Ingredients:
  • 2 oz. Winter Bamboo Shoot
  • 2 oz. Dried Black Fungus, Soaked
  • 1 oz. Dried Daylily, Soaked
  • 7 oz. Wheat Gluten
  • 3 oz. Shiitake Mushroom
  • 2 oz. Peeled Peanut
  • 1 tbsp. Chef Made Green Onion Oil (See "Chef John's Signature Oils" Video)
  • 1 tbsp. Shaoxing Wine
  • 4 cup Water
  • Seasoning
  • 1 Stick Cinnamon
  • 2 counts Star Anise
  • 0.5 tsp. Five Spice Powder
  • 2 tbsp. Soy Sauce
  • 0.25 cup Rock Sugar
  • 1 tsp. Salt
  • 2 tbsp. Sesame Oil

Cut winter bamboo shoots

Optional: make the Wheat Gluten chunks following the directions here. Skip this if you prefer to buy wheat gluten from the Asian supermarkets. Soak black fungus in water for an hour. Soak dried daylily in water for an hour and remove the stiff stem.

Blanch mushrooms, black fungus, daylily, winter bamboo shoots, and peeled peanuts in boiling water. Drain and set aside.

Squeeze the water of soaked wheat gluten. In a cooking pan, bring enough oil to 350°F (180°C) temperature. Deep-fry wheat gluten until they are dry, so they would absorb the taste easily when braising.

In a cooking pan, add oil, stir-fry all the ingredients just water blanched for a few minutes. Then add the fried wheat gluten and water (appropriate amount), stir and bring to boiling.

Then add following seasonings: cinnamon stick, dried star anise, five-spice powder, soy sauce, rock sugar, and a pinch of salt, lower the heat and simmer for an hour.

Turn up the heat, add sesame oil, stir-fry to desired consistency.
