Ingredients:

  • 4 cup All-purpose flour
  • 3 tsp. Baking powder
  • 3 tsp. Baking soda
  • 2 tsp. Salt
  • 1/3 cup Granulated sugar
  • Wet ingredients -
  • 1 large Egg
  • cup Buttermilk
  • 1 tbsp. Melted butter
  • 1 tsp. Vanilla extract

  • 1 tbsp. Neutral oil
  • 1/4 cup Blueberries
  • 1 tbsp. Maple syrup
  • Maple butter
  • 4 tbsp. Unsalted butter
  • 1/4 tsp. Salt
  • 2 tsp. Maple syrup
  • 1/4 tsp. Cinnamon powder
  • Sausage Patties
  • 3 lb. Pork shoulder
  • 2 tsp. Coarse salt
  • 1/2 tsp. Nutmeg
  • 1 tsp. Chile flakes
  • 2 tsp. Sage
  • 2 tsp. Thyme diced
  • tsp. Ground black pepper
  • 2 tbsp. Maple sugar powder

Preheat oven to 170°C / 325°F.

In a large bowl, whisk flour, sugar, baking powder, baking soda and kosher salt together. Store in a jar for up to 2 months or use immediately. In a medium bowl, whisk buttermilk, eggs and vanilla. Stream the melted butter into the mixture. Whisk wet ingredients into dry until lightly mixed, some lumps are fine.

With a hand mixer, mix all the [Maple Butter]ingredients until combined.

In a kitchen stand mixer with the paddle attachment, mix all the [Sausage Patties] ingredients on low, 2-3 speed, until meat appears fuzzy, 3-4 minutes. (Freeze extra sausage for up to 3 months and use it fresh within one week.)

To shape the patties, divide the ground pork mixture into balls and then gently press.

Heat a cast-iron over medium-high heat. Cook the patties for 2 minutes on each side or until cooked through.

Heat a large cast-iron griddle or skillet, medium-low heat. Add oil to the skillet and ladle ¼ or ⅓ cup of batter into the skillet. Work in batches to not overcrowd the pan. Add blueberries evenly across the top of the pancakes.

Flip pancakes after bubbles appear on the surface, about 2 to 4 minutes. Cook until the other sides are lightly browned. Remove pancakes to a wire rack set inside a rimmed baking sheet, and keep in the heated oven until all the batter is cooked and you are ready to serve.
