Imagine coming home, on a cold winter’s eve, from a tiring work day only to be greeted with the best plate in the world, a heart, warming aroma of your favourite lasagna. A robust meaty sauce compliments the delicate ricotta bechamel, topped with a golden layer of mozzarella. Every bite is soft and squishy leaving you warm and cozy. What a way to complete the day!

Ingredients:

  • 1 tbsp. Olive Oil
  • Half Onion, diced
  • 3 Garlic Cloves, minced
  • 2 sprigs of Oregano
  • 3 Bay Leaves
  • 1 lb. Ground Beef
  • 2 tbsp. Butter
  • 2 tbsp. Red Wine
  • 0.5 tsp. Salt
  • 0.25 tsp. Black Pepper
  • 2 tbsp. Tomato Paste
  • 2 Medium Tomato, diced
  • 1.5 cup Tomato Sauce
  • 1 cup Beef Broth
  • 1 tsp. Paprika
  • 0.25 tsp. Cinnamon Powderㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ
  • For The White Sauce
  • 4 tbsp. Butter
  • 0.25 cup Flour
  • 1 cup Milk
  • 3 Bay Leaves
  • 1 cup Heavy Cream
  • 0.5 tsp. Salt
  • 0.25 tsp. White Pepper
  • 0.5 cup Ricotta Cheese
  • 0.25 cup Parmesan Cheeseㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ

  • 1 cup Mozzarella Cheese
  • 1 cup Cheddar Cheese

Heat the oil in a pan. Stir in onions and cook until soft, golden and translucent. Stir in chopped garlic, oregano and bay leaves.

Add ground beef, brown slightly; mix in butter and stir well to combine all ingredients.

Add a dash of red wine, stir well until mince is evenly browned and soaked up the wine.

Season with salt and pepper, then add the tomato sauce, diced tomatoes, mix well. Add the beef broth and gently simmer for 10 minutes. Stirring occasionally to prevent sauce from sticking to the pan. Add paprika, cinnamon, minced parsley and mix well. Remove it from the heat and set aside.

Heat a new pan and melt the butter. Add in the flour and whisk together forming a roux (base for the white sauce).

Stir in the milk, bay leaves, cream and seasoning. Whisk continually (to prevent lumps) to form a smooth sauce. Simmer gently on a medium low heat.

Remove the bay leaves from the sauce, then gently stir in the ricotta and parmesan cheese. Remove from the heat.

Preheat oven: 350°F/180°C

Smear the base of the lasagne dish with a thin layer of bolognese sauce. Lay the lasagne sheets over the sauce.

Cover the lasagna with a thicker layer of bolognese sauce followed by a thinner layer of the cheese sauce. Repeat the process again, forming three layers of lasagna.

The top layer should end with the cheese sauce and a scattering of mozzarella and cheddar.

Cover the dish with tin foil and bake in the oven for 40 mins.

Remove the foil and bake (a further 5 minutes) or until a golden cheesy topping appears.

Note: Allow your lasagna to set for at least 10 minutes. This will give a better cut and flavour to the dish.
