Ingredients:
  • 6 ea. Bananas
  • 4 tbsp. Sunflower or other light oil
  • 4 tbsp. Maple Syrup
  • 2.5 cup Whole-Wheat flour (or whole wheat pastry flour)
  • 1 cup Shredded coconut
  • 2 tsp. Baking powder
  • 1 tsp. Baking soda
  • 2 tbsp. Shredded coconut for topping
Directions:

Preheat oven to 330 °F/135 °C and grease a 12×5-inch loaf pan.

In a large bowl, mash the bananas with a fork.

Add the oil, maple syrup, coconut, flour, baking soda, and baking powder and mix with a fork until combined. Do not overmix, it will look a little bit lumpy and that is ok.

Pour the batter into your greased loaf pan. For a stickier result bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean. (NOTE: Can leave in the oven for 50 to 55 minutes if a drier result is preferred.)

Let the bread cool in the loaf pan for at least 10 minutes. You may need to run a butter knife around the edges to loosen the bread from the pan. Carefully transfer the loaf to a wire rack to cool before slicing. Enjoy!
