You can’t beat an all-butter crust on your apple pie for that flaky pastry result that melts in your mouth. Lots of little tips and techniques in my video and recipe, to help you produce a lattice crust topping and a great homemade apple pie.

Ingredients:
  • Pie Shells
  • 2 cups + 2 tbsp All-Purpose Flour
  • 1 tbsp. Sugar
  • 1 tsp. Salt
  • 8 oz. Unsalted Butter (cold, cubed butter)
  • 2 oz. Cold Water
  • Pie Filling
  • 5 Large Apple, peeled and diced
  • 1/2 cup Sugar (brown, white or mixed)
  • 1 Lemon, Juiced
  • tbsp. Flour
  • 3 tbsp. Butter
  • For The Top Crust
  • 2 tbsp. Milk, for brushing top crust.
  • 2 tbsp. Sugar (granulated or turbinado sugar)

Pre heat the oven to 180°C / 350°F.

In the bowl of an electric mixer or food processor, put flour, sugar, and salt. Mix to blend.

Cut the chilled butter into small chunks and add it to the mixer, mix with the flour until the butter is the size of a pea-sized.

Then slowly stream in chilled water, stopping the mixer when dough starts to form a ball.

Separate the dough into two patties, press them and form two round discs.

Wrap two patties and put in the fridge for at least 30 minutes. Note : you can keep up to two days in the fridge, or two months in the freezer tightly wrapped.

Roll to ⅛” thick, then chill and rest again for approx. 30 minutes this process is to relax the gluten in the dough.

To blind bake your base first. it will help make the bottom of the pie more crispy.

Mix filling ingredients, except the butter, and leave to macerate at least 30 minutes, and up to two days.

Fill the pie tin with pie crust, leaving ½” overhang

Stir the filling, then pour into crust.

Cover with top crust, cut to ½” overhang, then fold under and crimp as desired.

Cut steam vents in the top crust, brush with milk, and sprinkle with sugar.

Bake in 180°C / 350°F oven until apples are fork tender and filling is bubbling thickly in the center of the pie.

Cool at room temperature at least 3-4 hours before cutting.
