Ingredients:
  • For The Bacon
  • 1 tbsp. Olive oil
  • 1/2 lb. Chopped bacon, or turkey bacon
  • For The Potatoes
  • 1 cup Brown onion, peeled and diced
  • 1/2 cup Celery, diced
  • 1 tsp. Salt
  • tsp. Black pepper, divided
  • 3 cloves Garlic
  • 12 tbsp. Flour
  • 2 lb. Yukon gold potatoes, peeled and small diced
  • 4 cup Reduced sodium chicken stock
  • 4 oz. Reduced-fat cream cheese softened
  • 12 oz. Low fat evaporated milk
  • 1 cup Shredded cheddar cheese
  • Garnish
  • Bacon
  • Shredded cheese
  • Green onions
  • Bread bowls for serving, optional

Add a slight drizzle of olive oil or butter to a dutch oven or large heavy-bottomed pot.

Add bacon and cook for 6-8 minutes until golden brown. Drain the oil, and set it aside.

Add onions, celery, salt, and pepper, and cook for 2-4 minutes.

Toss in the garlic and stir well, and add flour mix well.

Pour in potatoes, chicken stock, bacon, and increase heat. Season with salt and pepper. Bring to a boil, then reduce heat to a simmer and cook for 15 minutes, or until potatoes are tender.

Add softened cream cheese, low fat evaporated milk, and blend them all together.

Add shredded cheddar cheese and pepper, stir to combine, and simmer 5 minutes or so, until slightly thickened.
