Ingredients:
  • 1 lb Yellow Croaker
  • 1 tbsp White Wine r [Marinade]
  • 1 tsp Salt [Marinade]
  • 1 pack Multi-Use Tofu, Cut Into Small Cubes
  • 0.25 tsp salt [blanching]
  • 2 tbsp Cooking Oil
  • 3 oz Chicken Breast, Diced
  • 1 tbsp Szechuan Peppercorn Oil or Chef-Made Peppercorn Oil (See 'Chef John's Signature Oils' Video)
  • 1 tbsp Shaoxing Cooking Wine
  • 1 tbsp Sliced Garlic
  • 1 tbsp Sliced Ginger
  • 1 stalk Green Onion, Cut Into 1.5-Inch Pieces
  • 2 tbsp Carrot, Sliced
  • 2 cups Water
  • 1 tsp Oyster Sauce [Seasoning]
  • 0.5 tsp Soy Sauce [Seasoning]
  • 0.5 tsp Sugar [Seasoning]
  • 0.25 tsp White Pepper, to Taste [Seasoning]
  • 2 tbsp Cornstarch Slurry (2 Tbsp Cornstarch Mixed With 1 Tbsp Water)
  • 3 stalks Green Onion
  • 0.5 tsp Sesame Oil

Scale, remove innards and wash the yellow croaker until clean.

Punch holes on both sides.

Rub with salt, and sprinkle 1 tablespoon white wine.

Hang and air-dry for 15 days in cool and windy condition.

Cut salted fish into small pieces.

Deep fry salted fish at 300-350°F (150-180°C) until golden; drain.

Blanch tofu in hot water, add a pinch of salt in the water before blanching.

Heat a wok, stir fry chicken, drizzle about peppercorn oil and cooking wine, and cook until fragrant.

In the same wok, when the chicken turns white, add garlic, ginger, green onion, carrot; return the fried fish pieces to the wok, and mix thoroughly. Add cooking wine and keep stir-frying.

In the same wok, add enough water so all ingredients are immersed in it. Then add Tofu cubes, oyster sauce, soy sauce, salt, and sugar to the mixture, continue cooking while mixing, sprinkle ground white pepper, thicken with water and starch slurry.
