Like a lot of bacon from around the world, Chinese salted pork is often made from pork belly. Chef John shows you how it’s made with step by step instruction.

Ingredients:
  • 2.2 lb. Pork belly with skin, Cut into about 1 inch thick long strips
  • 8 oz. Coarse salt
  • 1 oz. Sichuan peppercorn
  • 5 cup Hard liquor, small amount

In wok over medium heat, add salt and Sichuan peppercorn, and stir until peppercorn fragrance.

Put salt in a shallow container.

In another bowl with enough hard liquor, bath pork strips in liquor.

Rub pork strips with salt mixture. Place a heavy object on top of pork strips. Set aside overnight.

Tie a string to one end of pork strip, and hang with air-dry method for at least 7-10 days. (It's the best for natural aging and dehydration processes in the cold and windy winter months.)
