Sweet and soft, delicious and creamy – this no-bake raspberry cheesecake using raspberry puree helps to become this dessert a treat you can enjoy year-round.

Ingredients:
  • 85 g Oreo Pink
  • 40 g Unsalted butter
  • 90 g Raspberry puree
  • 4 g Lemon juice
  • 15 g Sugar
  • 2 g Gelatin
  • 3 g Raspberry liqueur
  • 200 g Cream cheese
  • 53 g Sugar
  • 5 g Gelatin
  • 25 g Raspberry puree
  • 180 g Fresh cream

After removing the cream of Oreo Pink, put it in a plastic bag and crush it. You can also use a food processor.

After mixing with melted butter, place in a hard mousse mold and press flat. Harden in the refrigerator.

Put the raspberry puree, sugar, and lemon juice in a pot and boil it until the edges are bubbling. After removing the water from the soaked gelatin, put it in and melt it.

Add raspberry liqueur to the raspberry puree, mix well, and pour over step 2. Freeze for at least 30 minutes.

In a large bowl, loosen the cream cheese. Then, add sugar and mix well.

After melting the soaked gelatin, add it to cream cheese mixture. Combine to mix well.

Divide 60% whipped cream into two portions and mix.

After pouring on top of step 4, evenly spread the top and freeze for at least 4 hours.

After hardening, apply a thin glaze on the top.

Wrap the outside of the mousse ring with a heat gun or hot kitchen towel and remove the ring. Enjoy!
