Chef Pollaci did not choose a career in the culinary arts; the career chose him. With a long family history deeply intertwined with the food world, Perry has a lifelong passion for cooking.
A New York native, Pollaci grew up in restaurant world, pitching in to help out with his parents’ restaurants at a young age. As early as age 12, he found himself bussing tables, dabbling in dish washing, and even prepping ingredients for mise en place, often taking cues from his grandfather, who himself was a chef.
Perry found himself working with some of New York City’s most renowned chefs, including Michael Mina, Richard Farnabe, Caesar Ramirez, John Johnson, and Geoffrey Zakarian.
Most recently, Perry was the Executive Chef at The Royce at the iconic Langham Huntington Hotel in Pasadena and Firefly, a staple spot in Studio City. Perry enjoys spending time with his wife and their one-year-old son and their awesome cat.
